T-minus 6 days to demo

As is the trend this winter/spring, we are embarking on a kitchen remodel.  The cabinets and appliances are in our garage.  Monday is the predicted start day, when demo will begin.  We learned this yesterday afternoon.  So 6 days to pack everything up, not only in the kitchen but the adjacent family room, and relocate to the living/dining room.  Should be smooth.

The project is expected to take 8 weeks, hopefully less but I'm not holding my breath. We've done the kitchen remodel on the PDX house, so we kind of know the drill.  Last time we had a microwave, hot plate, BBQ, with a dishwasher rigged up in the basement.  Erin was about 9 months old at the time, so we were pretty much only cooking for two.

This time we're considering paper/compostable plates, microwave, BBQ, and our camping cookstove.  We are thinking of having a very basic menu of 7 easy meals - either all made in the microwave or in one pot - and using the same menu for the span of the project.

Any meal ideas, dear readers? I mean, other than Budget Gourmet one night and Asia Palace the next.

Premake lasagna and freeze it!! Then microwave it! Good luck McMillers!!

Very exciting. I will be checking back here for recipe ideas... we're planning on lots of BBQ, if the weather cooperates. Sounds like out start dates are just about identical (getting confirmation about that today), but our total time shouldn't take that long. I hope!

What about crock pot meals? I have a super easy chicken taco one we make often.
Dump a can of corn and can of black beans in the bottom of crockpot (drain both). Layer chicken breasts on top, frozen is OK! sprinkle with your own seasonings or use a "Taco" Packet. Dump a jar of salsa on it and set it for 4 hours on high, or 6-8 on low.
then shred the chicken with two forks, slap it in a tortilla and call it a day. It's yummy!

I like some spice, so I throw in some kind of hot pepper too.

Yay for remodeling! 8 weeks? No problem!

What about the crockpot? We make crockpot chicken & quinoa about once a week but you make just about anything in a crockpot if that doesn't suit you.

I also have had success making burritos and freezing them. And of course there is grilled cheese, hot dogs, etc. Just keep it simple!
